<image:caption>she/her Emily developed a love and passion for cooking in the home of her grandmother’s kitchen in the heart of Arkansas. Her grandmother was an adventurous cook who poured over Bon Appetit and Saveur magazines and always tried something new and exciting to make. Feeding people has always connected Emily back to her grandmother, so she decided to take that passion and run with it. She graduated culinary school with a degree in both culinary arts and baking/pastry in 2018 and has worked in kitchens for over 6 years. Getting to make people happy with food is a love language and Emily feels honored to get to do it for a living. <image:title>Our Chefs - Maddy Betancourt, MScN, CPC</image:title>
<image:caption>she/her Maddy has had a lifelong love of food. Growing up, she was homeschooled, and much of her “classroom” was the kitchen, garden and u-pick farms. Her mom taught her about all things seasonal and local; growing plants from seeds, harvesting the produce, and bringing it to the kitchen to cook, bake, can, dry, freeze, or ferment. In her early twenties she worked at a gluten free, dairy free, allergen-friendly bakery, and found so much satisfaction providing customers with treats that put smiles on their faces while also meeting their dietary needs. She became interested in nutrition after dealing with some health issues in her teens that were solved with nutritional adjustments. She went on to pursue her Masters of Science in Nutrition at the National University of Natural Medicine. Additionally, she has a Health Coaching certification from the Institute of Integrative Nutrition. She is passionate about the intersection of food, pleasure and nourishment; helping people eat food that lights them up, while also fueling their bodies to do all the marvelous things they love to do. When she’s not cooking, you can find Maddy in the garden, listening to podcasts or reading, on a hike, or doing yoga.</image:caption>

      <image:title>Our Chefs - Amanda Felan, CPC</image:title>
<image:caption>she/her Amanda’s connection to food began during summers with her grandparents in South Texas, where time around the grill, smoker, and family kitchen showed her how naturally food brings people together. Meals and holidays held some of her family’s greatest moments, shaping an appreciation for cooking that would eventually become a career. Interestingly, becoming a chef didn’t begin with being naturally gifted in the kitchen. Amanda was drawn to the challenge of mastering something she wasn’t particularly good at yet. That determination grew into a culinary career spanning more than two decades and a deep appreciation for the craft of cooking. Her cooking today is grounded in whole ingredients, seasonality, balance, and respect for the ingredient itself. She has a particular affinity for Southern regional cooking and enjoys drawing from the Creole and German culinary traditions connected to her roots. Her food is thoughtful and comforting, allowing good ingredients and careful technique to speak for themselves. After years in professional kitchens, Amanda appreciates the personal nature of cooking in someone’s home-learning what a family genuinely enjoys and creating meals that become an anticipated part of their week. It brings her back to what first made cooking meaningful: caring for people around a table. Outside the kitchen, Amanda loves spending time with her husband and their little household of senior Golden Retrievers, Ewald and Niles, and their black cat, Agador Spartacus. She enjoys music, gardening, reading, and exploring the Pacific Northwest with her family. Her perfect day is a rainy hike followed by a good book at home with the windows open.</image:caption>

      <image:title>Our Chefs - Lisa Vesely, CPC</image:title>
<image:caption>she/they Lisa was born in Salem, OR to a loving family who made a good living working in fast food. Surrounded by ultra-processed sustenance at the same time that her mother mindfully made lovely meals from scratch, self-nourishment was confusing. The family celebrated enjoying big meals together with an emphasis on how delicious everything was, food was perceived as fun more so than fuel. Descended from farmers in the Midwest, Lisa and her family moved back to Kansas and then later to Iowa where the lightning bugs and thunderstorms reigned. Lisa has a deep love of nature, and watched with fascination as her mother grew fruits and vegetables in a side-of-the-house garden, then later would eat processed junk. Since then, she has been on a learning journey that brought her back to Oregon where she has been since the year 2000. She has worked mostly in food service, including 10 years as a residential care cook in an upscale retirement community making special diets for the elderly in assisted living, at a top-rated food cart, and as a baker at a locally owned grocery store. Lisa spent the last 4 years working as a counselor/mentor at a drug and alcohol treatment center, and is currently studying for her Masters Degree in Nutrition at NUNM in an effort to develop further understanding of what it is to nourish oneself, bodily, mentally, and spiritually.</image:caption>

      <image:title>Our Chefs - Suah Yu, CPC</image:title>
<image:caption>she/her Suah’s love of food was fostered through tradition, shared experiences, and a fascination with how simple ingredients transform across cultures. Growing up in a Korean household, she learned that food was its own language. “Have you eaten yet?” is a standard greeting, and a plate of cut fruit could express encouragement, gratitude, or even an apology. Raised in the South and shaped by vibrant city life on both coasts, she’s witnessed the magic that unfolds when diversity is honored and shared at the table. With a background in industrial design and sustainability, Suah brings a thoughtful, intentional approach to everything she creates. After navigating burnout and autoimmune challenges, she shifted her focus toward nutrition and holistic practices. She’s learned to listen closely to the body and understands how food can support energy, healing, and overall vitality. Suah cooks with curiosity and care, blending nourishment with pleasure. She believes healthy food should feel satisfying, generous, and deeply comforting, most often finished with a squeeze of lemon. When she isn't indulging in her cozy homebody tendencies, you can find her outside chasing sunshine, wandering forests, and poking at campfires with her husband and pup.</image:caption>

She has a lifelong passion for food and wellness. Growing up with a health-conscious mother, she developed an early appreciation for cooking and for the powerful role food can play in supporting vitality. With experience working in restaurants, primarily in front-of-house roles, Olivia gained a deep appreciation for hospitality, attention to detail, and the joy of sharing a meal. She creates dishes that balance flavor, nourishment, and quality ingredients, bringing creativity to every meal. Her nutrition background guides a food-as-medicine approach to cooking. Meaghan majored in Journalism with a minor in Food Studies at the University of Oregon, where her capstone project allowed her to work on the school’s Urban Farm. <image:title>Our Chefs - Lauren van Staveren, CPC</image:title>
<image:caption>she/her Lauren has always found immense joy in food and was lucky to be raised in the food-rich city of Portland. She discovered an enthusiasm for holistic nutrition while searching for solutions to her own food sensitivities after feeling dismissed by conventional medicine. She uncovered for herself the life changing power of using food as medicine and was astonished by the body’s ability to heal itself with proper nutritional support. This eventually led to a degree in Functional Nutrition and a passion for creating flavorful, comforting, nutritious meals. In her spare time, she can be found decorating gluten-free cakes, listening to 90’s girl bands, talking about the digestive system, and making impromptu trips to the Oregon Coast.</image:caption>
